Smoked Chicken
Easy BBQ Sauce
Directions
Preheat smoker to 300-350°F.
Trim the chicken thighs of excess skin and fat. Brush one side with mustard and sprinkle generously with the seasoning. Turn the thighs over and repeat the process.
Open the smoker and place the thighs on the grill skin side down. Close the smoker and reduce heat to 225°F. Smoke for 45 minutes.
Meanwhile, in a large glass measuring cup, heat the jam in the microwave until melted. Stir in the BBQ sauce and orange juice. Sauce will be thin like runny yogurt.
Brush the chicken thighs with the sauce and then turn them over. Brush the tops with sauce and close the lid. Smoke another 15-30 minutes, brushing with the sauce one more time. The thighs are cooked when the juices run clear and the internal temperature is 160°F. Remove to a platter and let rest for 10 minutes before serving.
