I love chocolate cakes and have quite a repertoire of them - all with different tastes and textures. Liz's Chocolate Cake ranks right up at the top! The key to this recipe is the hot water - pouring it over the cocoa powder causes it to 'bloom' and release flavour particles. This cake is incredibly chocolaty and moist. Frost with the fluffy peanut butter frosting, or change things up with your own icing.

2 cups brown sugar

2 cups boiling water

2 tsp baking soda

1/2 cup butter

2/3 cup cocoa powder

2 eggs

2 cups all-purpose flour

2 tsp baking powder

1 tbsp vanilla extract

1/4 cup chopped peanuts, for garnish

1 cup room temperature butter

1 cup smooth peanut butter
-
1 tsp vanilla extract

3 cups icing sugar

1/4 cup milk

Directions
In a mixer bowl, mix together the brown sugar, boiling water, baking soda, butter and cocoa powder until the butter has melted.
Then, all at once, add the eggs, flour,baking powder, and vanilla and mix until smooth. Pour into a greased 9" x 9"round parchment-lined baking pan.
Bake at 350°F for 40-45 minutes, or until a toothpick inserted into the centre comes out clean.
Cool for 10 minutes and then remove the cake to a cooling rack. Cool completely before frosting.
When cool, split the cake into two layers. Place the bottom layer on a cake plate, cut side up. Spread the bottom layer with some of the peanut butter icing. Top with the second layer; cut side down. Frost sides and top of the cake. Sprinkle the top with chopped peanuts.
Peanut Butter Frosting
Beat the butter, peanut butter and vanilla extract until fluffy. Gradually add icing sugar alternating with milk. Beatwell. Makes enough icing to fill and ice the top and sides of the cake.
