Liquid rather than creamed honey works best in this cookie.
Ingredients

2 1/4 cups flour

1 1/2 tsp baking soda

1/2 tsp salt

1 tsp ground ginger

1/2 tsp cinnamon

1/4 tsp cloves

3/4 cup shortening (don't use butter)

1 cup brown sugar

1 egg
-
1/4 cup liquid honey
-
water, for dipping

granulated sugar, for dipping
Directions
Preheat oven to 350°F. Line two cookie sheets with parchment paper.
Whisk together the flour, soda, salt, ginger, cinnamon, and cloves. Set aside.
In a stand mixer, cream the shortening with the brown sugar until light. Add the egg and beat well. Add the honey and mix to combine.
Add the dry ingredients all at once and mix well. Cookies can be made now, or you can chill the dough for 1 hour.
Prepare a small bowl with about 1/4 cup cool water. Prepare a second small bowl with a 1/4 cup granulated sugar.
With you hand, roll the dough into balls about 1" across. Dip the top half in the water, and then into the white sugar. Set the ball on the cookie sheet sugar side up, spacing each ball about 1 1/2" apart.
Bake for 11-12 minutes until the cookies are golden and slightly soft. Let cool 10 minutes before removing to a wire rack to cool.
