Ingredients
- 1 cup lightly packed carrot leaves (no stems)
- 1 large clove garlic, peeled
- 1 tsp dried oregano
- ½ tsp paprika
- 1/4 cup water
- 2 tbsp red wine vinegar
- 1 tbsp walnuts
- 2 tsp tahini
- 1 tsp Dijon mustard
Directions
Toss everything into a blender or smoothie cup and whirl until smooth. Taste and adjust seasonings. The vinaigrette thickens upon standing. Store in a jar in the fridge for up to 5 days.
